Why McDonald's does this

Steak patties need their own freezer space, their own holding cabinet slot and their own supply line, for one item that sells in far lower volume than a McMuffin. Franchisees in lower demand markets skip it. That is also why it disappears and reappears — operators add it when breakfast traffic supports it and drop it when it does not.
